Tongue is a tough portion of meat, which is high in cholesterol and fat. The average weight of a Beef Tongue is around 3-4 lbs. and can either be sold as is or after brining. The Tongue is extracted by cutting it off its root and removing the windpipe. Blood vessels connected to the tongue are also removed to produce a meaty portion with around 65 percent of its calories coming from its fat.

Cooking the Tongue is a multi-step process as removing its prickly external covering can be a cumbersome task. It is then soaked in cold water for a few hours before trimming the fatty tissues. The Tongue is then boiled in water usually with vegetables. Once the meat is tender, the meat is allowed to cool and then peeled off its covering to be ready for cooking. Since it is a tough portion of meat, it is best to braise or stew it. It can also yield good results if roasted.
